Recently in health class, Shrub Oak staff and students explored the importance of balanced meals by preparing and enjoying a fresh, flavorful pearl couscous salad. As part of our ongoing effort to integrate hands-on learning into the curriculum, this cooking experience gave Shrub Oak students the opportunity to engage with healthful ingredients, practice meal preparation skills, and better understand the components of nutritious eating.
Class began with a discussion on the building blocks of a balanced meal: protein, whole grains, vegetables, and healthy fats. Students learned how each element supports physical and cognitive health, and how making thoughtful food choices can support overall well-being. Staff and students then reviewed the recipe together, identifying which ingredients contributed protein, fiber, vitamins, and flavor.
Each student had a role in preparing the dish. Some measured the pearl couscous, others stirred in olive oil and a pinch of salt, while a few students helped chop the tomatoes, cucumbers, and fresh herbs like rosemary and basil. Goat cheese added a creamy texture and tang, while roasted chickpeas provided crunch and a source of plant-based protein. A squeeze of lemon brought everything together, enhancing the salad’s freshness. The hands-on process encouraged collaboration, sensory exploration, and independence in the kitchen.
Throughout the activity, students demonstrated curiosity and enthusiasm. One student described the salad as “nature’s candy” after tasting a bite, and several others eagerly requested second helpings. Even those who were initially hesitant to try new ingredients ended up participating fully and enjoying the experience. The lesson reinforced that healthful food can be both delicious and satisfying, especially when students are involved in the process from start to finish.
Cooking and nutrition lessons like this one are essential components of our transdisciplinary approach at Shrub Oak International School. By combining academic concepts with real-world application, we help students build practical life skills that extend beyond the classroom. In this case, students not only learned how to prepare a healthful meal but also developed fine motor skills, practiced teamwork, and gained confidence in their ability to follow multi-step directions.
